A Better Banana Bread


It's not the "best" because it still contains a cup of sugar but it is a bit better for you!
Banana Bread
1 cup flour
1 cup whole wheat flour
1 tbls. wheat germ
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. cinnamon
1/8 tsp. nutmeg
2 beaten eggs
1 1/2 cups mashed overipe bananas (about 5 medium)
1 cup sugar
1/2 cup cooking oil or melted butter
1/4 cup chopped nuts (or for a variation I add 1/4 cup dark chocolate chips)
I blend the mashed bananas, oil, eggs, & sugar in my stand mixer.
I stir together the dry ingredients and then add to the wet ingredients.
Stir in nuts or chocolate chips.
Bake in a greased loaf pan at 350 for 55-60 minutes.
Let cool on a wire rack before slicing.
