Zookies!


My Zucchini Cookie Recipe
Cream Together:
1 cup softened butter
1 cup packed brown sugar
Add:
2 eggs
1 tsp. vanilla extract
Mix & Add to Wet Ingredients:
1 cup white flour
1 cup wheat flour
1 tsp. baking soda
1/2 tsp. salt
Add:
2 small shredded zucchini
2 cups oatmeal
1/2 cup shredded coconut
1 cup butterscotch chips
Drop dough by the teaspoonful onto greased cookie sheets. Bake at 350 for 12 to 14 minutes!
Enjoy, these are delicious and healthy!

    They are from a local artist that use to have a website called www.yikyakdesigns.com, which I see is no longer in use. I purchased mine at a shop by Union College and I can't think of the name at this time. I'll get back to you on it. There are several other vendors who make close knock-offs that I've seen at the Farmer's Market too.

    Also, you do need to be 15 to work in Nebraska in grocery stores and restaurants. However, my 13 yr. old could have detasseled for two weeks that just finished. It's a matter of height not age to detassel. I guess since it's just two weeks long, so the age doesn't matter.
